Tomato & Mushroom Pasta

A Pasta dish filled with flavour!

I love meals like this! Simple and easy to make and packed with flavour.

Total time: 55 min


 

Ingredients


2 Cups Pasta of your choice

1 Pint Cherry Tomatoes

1 Tbsp Olive Oil

1 Pinch Salt & Pepper

8oz Mushrooms, finely chopped

1 Shallot Onion, finely chopped

1/2 Cup Sundried Tomatoes, finely chopped (if jarred drain excess oil)

1 Red Pepper

1 Tsp Salt

1/2 Tsp Pepper

1 Tsp Garlic Powder

2 Tsp Dried Oregano

1 Tbsp Tomato Paste

1/3 Cup Finely chopped herbs (Parsley, Basil)

1/2 Juice of a lemon


 

Method


  1. Preheat oven to 200 degrees

  2. Slice the tomatoes and add to a baking dish

  3. Drizzle 1 Tbsp of olive oil and stir

  4. Add salt, pepper, dried oregano and stir

  5. Bake for approx 20 minutes, until the tomatoes start to release juices

  6. Cook pasta as per packaging instructions. (Reserve 1 cup of pasta water prior to draining)

  7. In a skillet add the chopped mushrooms and oil. Cook for approx 10 minutes until the mushrooms are browned.

  8. Add the shallots, cook for another 5 minutes. Stirring often.

  9. Add sundried tomatoes, seasoning and tomato paste. Stir and cook for another minute.

  10. Add the 1 cup of pasta water, pasta and herbs. Stir well, add lemon juice and roasted tomatoes.

  11. Stir and serve. Enjoy!
