A Lentil Dhal packed super simple and easy to make! One of my personal favorites, perfect with a side of Rice or a Naan.

Ingredients
1 Tsp Olive Oil
2 Onions, diced
3 Cloves of Garlic, finely chopped
1 Tbsp Fresh Ginger, peeled & grated
1/2 Tsp Dried Chilli Flakes
1/2 Tsp Cumin Seeds
1/2 Tsp Mustard Seeds
2 Tsp Ground Turmeric
1 Tsp Garam Masala
1 Cup Dried Red Lentils (rinsed and drained)
1 Tin Chopped Tomatoes
1 Tin Coconut Milk
2 Cups Vegetable Broth/Stock
1 Pinch Salt & Pepper
1/2 Juice of a Lemon
2 Handfuls Spinach (Fresh)
Method
Heat the oil in a large pan
Add onion and cook gently for 5 minutes
Add garlic, ginger, chilli flakes. Cook for a few minutes
Grind the cumin, coriander, and mustard seeds. Add to pan along with turmeric and garam masala. Cook for 1 minute
Add the lentils, tomatoes, coconut milk, stock and seasoning. Stir and cook on a medium-low heat for approx 15 minutes until reduced and thick.
Stir often to avoid it sticking to the bottom of the pan
Stir in lemon juice and spinach until it wilts
Serve and enjoy!
