A Chickpea Pasta packed with flavour!
I’m always on the lookout for new tasty and diverse meals to try.
This Chickpea Pasta ticks all those boxes.
Left over portions are great for the next days lunch or dinner meal prep!

Total time: 40 min
Ingredients
3 Cups Pasta of your choice
2 Cloves Chopped Garlic
1 med Onion, diced
1 Large Carrot, peeled and chopped
3/4 Cups Coconut Milk, (or any plant based milk of your choice)
1 Tbsp Tahini
1 Tbsp Nutritional Yeast
1 Tbsp Cornstarch
1 Tin Chickpeas, drained and rinsed
1 Cup Green Peas
1 Cup Sweetcorn
1 Cup Broccoli
1/2 Cup Spinach
1/2 Juiced Lemon
Method
Cook the pasta according to package instructions
Cook the garlic and onion for 2-3 minutes (until softened)
Add the carrot and cook for another 3-4 minutes
Add the coconut milk, tahini and nutritional yeast. Stir together and bring to a light simmer
Add the chickpeas, green peas, sweetcorn, broccoli, spinach and stir
When the pasta is ready, drain it and transfer it to the pan of ingredients
Stir together and add the cornstarch, lemon juice, and any seasoning you wish
Continue cooking and stirring until the sauce thickens
Serve your chickpea pasta and enjoy!
